A good side dish can make or break your picnic, potluck, or cookout. This recipe will for sure MAKE whatever you are attending. It has that nice vinegar bite but is not overwhelming. When I was at an Easter dinner last week it was there and I found myself going back for seconds and asking if I could share the recipe! I hope you enjoy this as much as I do!
Ingredients
3lbs potatoes
6 slices bacon
3/4 cup diced onion
1/2 cup sugar
2 tbsp flour
2 tsp salt
.5 pepper
.5 celery seed
3/4 cup water
1/3 cup vinegar
Instructions
1)Peel potatoes and boil in preheated 1-inch salted water. Cover tightly and cook for 35 minutes or until tender. Drain and set aside.
2)In a pan fry the bacon, set aside, and use the bacon grease to cook the onions.
3)Stir in the flour, sugar, salt, celery seed, and pepper. Cook over low heat until it starts to bubble.
4)Remove from heat and add the water and vinegar and put it back on the heat and bring to boil while stirring for about a minute.
5)Slice the potatoes thin and crumble the bacon. Carefully add and stir both into the mixture until heated through and all potatoes are covered.
