Liz's Kitchen: Marcy's Buckeye Balls recipe

Buckeye Balls

Normally the Buckeye balls come out around Christmas but I went back to Ohio last weekend and my aunt pulled out all the stops with my favorites! These delicious little chocolate and peanut butter treats are shaped and named after Ohio's state nut, the buckeye! You'll find yourself snacking on them throughout the day because you can't stop at one.

Ingredients
1 cup softened margarine (do not use butter! they will not set up)
2 cups peanut butter
4 ½ cups confectionary sugar
6 ounces chocolate chips or wafers ( I use the wafers but I have friends who have used the chips.

Instructions
1) Mix butter, peanut butter, and sugar together and chill until firm.
2) Roll tsp. size mix into balls. Small is better! Place on a cookie sheet lined with wax paper and chill until firm again.
3) Melt chocolate in a double boiler. or use a bowl set in a pan of hot water on very low heat. You do not want to overheat the chocolate, it hardens. If that happens, a TBS. of Crisco will usually thin it.
4) Dip the peanut butter balls into the chocolate using a toothpick or skewer and then set back on your pan.
5) Chill again. Take them off the pan once chilled and store them in any container separating the layers with wax paper. Store in refrigerator to keep firm.
