This is another recipe from my grandma's recipe box. We had it a few times growing up and the last time we made I actually wrote it down so I could make it when I got back to Buffalo. Honestly, it's a healthier version a cheesy potato casserole...it's lighter too! It makes the perfect side did to any summer grilling recipe! I hope you enjoy it as much as I do!
Ingredients
4 medium squash (doesn't matter if it's yellow or green or both)
1/4 cup chopped onion
2 tbsp butter
1/2 cup sour cream
1 cup shredded cheddar cheese
salt and pepper to taste
Ritz crackers for topping
Instructions
Cut squash in to half moon slices and dice onion. Cook squash and onion together until tender and drain very very well.
Mix butter, sour cream, salt, pepper, and cheese and add to squash and mix.
Place in a 2-quart greased casserole dish and sprinkle with a little more cheese and the crushed ritz crackers (one sleeve will probably do the trick).
Bake at 350 for 30 minutes and enjoy!
