One of the reasons I love fall is that I love fall recipes. Savory and homey food that just gives you comfort. I used to hate squash but now it's one of my favorite ingredients. This recipe used Delicata squash, which I love because you don't have to peel it, which is such a time saver!
Ingredients
2 medium-sized Delicata squash, cubed
1 lb Italian sausage
4 oz spinach (half a bag), cut rough
1 medium onion, sliced thin
1 apple, cubed (I used a Gala)
2 cloves garlic, minced
1 1/2 cups monetary jack cheese, shredded
1.5 tbsp olive oil
1/2 tbsp Italian seasoning
Salt and pepper to taste
Instructions
Pre-heat oven to 400 degrees
Half and thinly slice your onions, add them to a pan with 1/2 tbsp of oil and a pinch of salt. Cook on medium to medium-low heat to caramelize.
Slice squash in half and scoop out the insides and cut into 1-inch cubes. Toss in 1 tbsp of oil and the Italian seasoning and a teaspoon of salt. Spread out on a baking sheet and roast for 20 minutes and then check to see if they're soft to the touch.
Once the onions are caramelized, remove them from the pan and set aside. Add the garlic to the same pan and then add the sausage.
Once the sausage is cooked add the dice apples and cook until softened. Then add the spinach until it wilts and then throw the onions back in a mix together. Add the mixture with the Delicata squash in a large bowl and mix together. Then an add the mixture to a 9x13 pan and top with the cheese. Cook the bake in the oven for 20-25 minutes or until the cheese browns nicely.
