
Sometimes mistakes are the best. After realizing I didn't have the right ingredients for the recipe that was planned, an audible had to called and dinner had to be made on the fly. Which honestly, sometimes our best things come from having to improvise. This super simple casserole is so tasty and it's like a meal all in one. The cornbread bottom give you texture and a great base for the sloppy joe mixture and how can you ever go wrong with cheese?!?! Give it a try, you'll love it!
Ingredients
1 package of jiffy cornbread mix
1 can of creamed corn
1/2 cup liquid egg whites
2 lbs ground beef
1 1/2 cups ketchup
6 tbsp water
1 tbsp brown sugar
1 tbsp Worcestershire sauce
1 tbsp yellow mustard
1 1/2 tsp chili powder
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
1 cup of cheddar cheese or more
Instructions
Mix the first three ingredients together and layer at the bottom of a greased/sprayed 9x13 casserole dish. Bake at 375 for 20 mins or until edges are brown. Set aside
Cook the beef with a little salt and pepper, once cooked add the remaining ingredients (except cheese) and stir together. Once thoroughly mixed simmer for 5 minutes to let thicken and come together.
Layer the sloppy joe mixture on top of the cornbread and top it with the cheese. Bake at 375 for 30 mins or until cheese is melted.
