Liz's Kitchen: Stuffed Pepper Casserole recipe

Stuffed Pepper Casserole

This is one of my go-to recipes! It's easy, delicious and a little bit healthy. I found this recipe years ago on the internet but since then have not been able to find it anywhere...it disappeared. I'm so glad I wrote it down, so old school I know, but without that I wouldn't be able to share it with you. I use this for meal prep, it makes 4 servings and I never grow tired of it. I hope you enjoy it too!

Ingredients
1 lb ground beef (or turkey, or chicken)
1 onions, diced
1 green pepper, diced
1 red pepper, diced
4.5 teaspoons minced garlic
1 jar marinara sauce (I use Rao's, but you can also use Chef's sauce)
2 cups cooked brown rice
1 cup part-skim shredded mozzarella cheese
1 tsp oregano
salt and pepper to taste

Instructions
Pre-heat oven to 375.
Cook the rice to the instructions on the box.
Next, cook the peppers, onion and garlic in the pan, once cooked and add to a big bowl but don't clean the pan.
Then cook your ground beef in the same pan as the peppers and onion, adding salt and pepper. Drain the fat and add to the bowl.
Add rice, sauce and oregano to the bowl and mix.
Place in a 9x13 and evenly distribute the cheese over the dish,
Cook in the oven for 30 minutes.
Serve and enjoy or let cool and divided into containers for the week!
