Cheesy Bacon & Asparagus Roll-Up Chicken

Years ago I was doing that thing where you just stare in your fridge to see what you have to eat and what you can make. I decided to take some of my favorites and wrap them up in chicken. I couldn't believe it was tasty. LOL. Over the years, I’ve made a few changes to the recipe to amp up the bacon flavor. My next step is to think about adding a pan sauce, but for now, this is delicious. It’s also fun to take out your frustration on the chicken when you’re flattening it! Like always – it’s super easy to make and of course tasty! I would not lead you astray when it comes to yummy food! Serve this up with your favorite side and you have a complete meal!

Ingredients
2 chicken breast
6-8 pieces asparagus
4 pieces of bacon
1 cup mozzarella cheese
1/4 cup breadcrumbs
Olive oil
Salt and Pepper

Instructions
Take your bacon and cook in a frying pan. You don’t want to cook all the way through, the bacon should still be on the soft side, this will just help crisp up the bacon in the oven. Do not throw out your bacon grease!

Take your chicken breast and pound them out flat. I like to put them in a ziplock back to keep the mess at bay, but using parchment paper works too.

Next, sprinkle a little bit of olive oil and rub on the chicken, season the chicken with salt and pepper. Next, take some cheese and sprinkle it over the chicken. Then take the bacon and asparagus and lay them on one end of the breast and so that the bacon and asparagus will stick out of either end.

Next you’ll want to roll the chicken, keeping the bacon and asparagus in the middle. Make the rolls as tight as you can. Use a toothpick to keep them together. Add a little more salt and pepper to the outside of the roll.

Heat the bacon grease back up in the pan and give the roll-ups a quick sear on all sides. Then place the rollups with the flap down on an oven safe pan. Use your tongs to safely remove the toothpicks so your chicken can sit flat with the flap down.

Take the bread crumbs and sprinkle them on the top of the roll-up to add some crunch and then add a little more cheese because why not? Place in the oven at 350 for 25-30 minutes.

Pull out of the oven and get ready for some goodness! The cheese on the top is like the cherry!
