Ingredients:
Two 16 ounce cans black beans– drained and rinsed
4 ounces bacon
4 ounces chorizo sausage
2 smoked sausages diced
2 Italian sausages mild or hot diced
1 tablespoon olive oil
1 onion chopped
4 cloves garlic minced
One 28 ounce can crushed tomatoes
1 bottle of beer
2 tablespoons chili powder
1 tablespoon cumin
1 tablespoon paprika
Salt and pepper
In a soup pot, over medium heat, add oil and sauté the chorizo and Italian sausages until browned. Once those are finished, remove and place in a bowl.
Then, in the same pot, add onions and cook until translucent. Add garlic and cook for one minute. Then add tomatoes, beer, and spices. Return the meat to the pot and reduce to thicken for about one hour.
While that’s cooking, bake the bacon on a wire rack in a 350 degree oven until crispy, or for about 15 minutes, flipping halfway through baking. Lastly, chop the bacon and use it to top off the chili. Add salt and pepper to taste. This chili is best served over white rice or with a toasted baguette.
