Roshini Rajkumar spoke with James Beard Award winner Chef Gavin Kaysen on REAL Talk with Roshini Sunday about his three restaurants: Spoon and Stable, Demi, Bellecour. Sharing that his businesses are down 90% in revenue, he says he's not ready to close shop on any of them. Demi was recently named a James Beard Finalist for Best Restaurant 2020. Kaysen doesn't want Minnesota to duplicate what's happening in Wisconsin, but he eagerly anticipates the day he can see and serve customers again in-house.
