Recent local and national surveys say anywhere from 50% to 80% of hospitality industry businesses won't survive the pandemic. We've already seen popular Twin Cities locations say they won't re-open, including Pazzluna and Bachelor Farmer.

Roshini Rajkumar spoke with James Beard Award winner Chef Gavin Kaysen on REAL Talk with Roshini Sunday about his three restaurants: Spoon and Stable, Demi, Bellecour. Sharing that his businesses are down 90% in revenue, he says he's not ready to close shop on any of them. Demi was recently named a James Beard Finalist for Best Restaurant 2020. Kaysen doesn't want Minnesota to duplicate what's happening in Wisconsin, but he eagerly anticipates the day he can see and serve customers again in-house. He knows the way that looks is still unclear and will be quite different from pre-COVID dining. Listen to the conversation here.
