Amid increasing destruction, officials urge more nutria eating

How about a big pot of nutria chili or smoked nutria and sausage gumbo?

The Louisiana Department of Wildlife and Fisheries is trying to get more people to eat the orange toothed rodent in hopes of increasing demand for the meat and decreased populations.

LDWF Biologist Catherine Normand says she knows it's tough to convince people to eat them.

''It's the revulsion that some people have just because it does look like a giant rat,'' Normand said.

She adds that Nutria cook up great and are really tasty.

''Oh yes they are, Nutria have a higher protein content and less fat than even turkey and it tastes a lot like rabbit.''

The state even has recipes posted to the Wildlife and Fisheries website:

  • Nutria Chili
  • Nutria Ragondin Sausage Jambalaya
  • Nutria Sausage
  • Smoked Nutria and Andouille Sausage Gumbo
  • Stuffed Nutria Hindquarters
  • Enola's Smothered Nutria
  • Heart Healthy 'Crock-Pot' Nutria

Meanwhile the bounty on nutria has gone up.

The state wants residents to kill the nutria with for the new price of six dollars per tail, up from five.

Normand says a dead Nutria is also worth some decent money because you can sell the pelt and the meat.
