Best Holiday Drink Ever! COQUITO Yum

I call myself 'Mimosa Mel' on Sundays obviously because I like to drink and I love brunch.  Well this drink recipe for Coquito (Puerto Rican eggnog) is good enough to add to any brunch...or holiday meal...or dessert...or absolutely anything.  It's creamy, spiced, and has one of my favorite ingredients:  RUM!

I stumbled on this video of a great recipe a few years ago and love the host Lupita's personality.

Trust me, you're going to love it so much that you'll be drinking coquito well into January.  (It also does a great job of spiking your morning coffee #readyforwork)

Ingredients:

2 beaten egg yolks

1 (12 fluid ounce) can evaporated milk

1 (14 ounce) can cream of coconut

1 (14 ounce) can sweetened condensed milk

1/2 cup White rum (Bacardi)

1/2 teaspoon ground cinnamon

1 teaspoon vanilla extract

Coconut Milk (optional)

1/4 teaspoon of Nutmeg (Optional)

Coconut Flakes (Optional)

Cinnamon Sticks (Optional)

Directions:

Combine egg yolks and evaporated milk. Stirring constantly, cook over medium heat until mixture is thick enough to coat the back of a spoon. Transfer mixture to a blender and add cream of coconut, sweetened condensed milk, rum, coconut water, cinnamon, nutmeg and vanilla. Blend for about 30 seconds. Put 2 Cinnamon Sticks in the bottle you will pour Coquito Mixture into and chill overnight.
