This 'Adult' Strawberry Mousse Is Perfect For Summer Fun!


Each year I prepare for holidays by looking up some favorite recipes, or finding new ones!

This year with 4th of July, I decided I'd try something nice and refreshing. I figured strawberries are the way to go, and so is something nice and boozy. Listen, it's been a stressful year, and Susie zone is a safe and judgement free zone. So, before you go shopping for Independance Day, here are just a few more things to snag before leaving the store.

The best part about this, is you can make it kid friendly too, just by omitting the alcohol. So here,we,go!

Stuff you'll need (4 servings)

 (1 and 1/3 cups) strawberries, stems cut

 5 tablespoons granulated sugar , divided

 1/4 cup (60 ml) full-fat cream cheese (make sure it's room temperature)

 1/2 teaspoon pure vanilla extract

 (OPTIONAL) 1/2 tablespoon orange liquor , can be Triple Sec, Gran Marnier, Cointreau

 3/4 cup (180 ml) heavy cream, cold

How to make the stuff
  • Place strawberries and 3 tablespoons sugar in a food processor , make sure it's mixted until it's completely smoothe. Then add cream cheese, vanilla extract, and liquor. Process until completely blended.
  • Using a whisk attachment on your electric mixer, whisk in the heavy cream, and 2 tablespoons of sugar, until it starts to stiffen. Add the strawberry mixture and whisk on low until completely blended. Don't overbeat. The mixture should be soft, and close to shaving cream texture. It's going to get firm once it's chilled.
  • Spoon into 3-4 serving dishes, and top with fresh sliced strawberries. You can even get creative and add shaved chocolate and fresh mint.

This should all take about 10 minutes, and you can keep it in your fridge for up to 3 days. Although, I doubt it'll last this long. ENJOY!
