'Qrockpot' Quarantine Thursday

Yesterday was my first full day of being on air from home. It seems like we have all the time in the world , when in reality I blinked and it was already 3PM. I hadn't even eaten anything yet, aside from having a cup of coffee.

I can only imagine what it's like for all you moms out there. Although, I'm sure feeding your children and having snack breaks is a big part of your day anyway. 

I decided if we're going through this 'Stay Home' together, maybe I can commit to doing a weekly thing with you together! Or atleast try to help out, right? 

I don't use my crockpot enough but I really do love it. I'm one of the very few who hasn't resorted or given into buying an InstaPot yet, but it's on the list, eventually. After realizing I just didn't have enough time to make something during the day, I looked at what I had in my pantry and said, let's throw something together. So last night I found a recipe online and figured i'd try it out!

Maybe while I do this, we can share each others, too.

This week I opted for 'Braised Chicken Thighs', but I ran out of thighs so I made a mix of thighs and legs!

6 bone-in, skinless chicken thighs (about 1-1/2 to 1-3/4 pounds)

1 large onion, halved lengthwise and sliced

4 medium new potatoes (about 1 pound), cut into 1/4 inch slices

2 c baby carrots

1-1/4 tsp salt, divided

1/2 tsp freshly ground black pepper, divided use

1/4 c chicken broth

1/4 c dry white wine (shame what happened to the remainder of the bottle)

1 tsp minced garlic

1/2 tsp dried thyme

1 tsp paprika

Place onion in a lightly greased 6-quart round slow cooker; top with potatoes and carrots. Combine 3/4 teaspoon salt, 1/4 teaspoon pepper, the broth, and next 3 ingredients. Pour broth mixture over vegetables. Combine paprika, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon pepper; rub evenly over chicken thighs, and arrange over vegetables.

Cover and cook on HIGH setting 1 hour; reduce heat to LOW setting, and cook 6 hours, or until chicken and vegetables are cooked and tender.

I cheated though, I ended up putting it on low for 8 hours. What could go wrong right? Exactly, I woke up to the smell of deliciousness in my kitchen. 

Now it's time to plan for next Thursday!
