Happy Fall y'all, and pumpkin season. Is a pumpkin a fruit or vegetable? Although it tastes a bit more like a veggie in it's more organic form, it's actually a fruit. Pumpkin mixes and bakes up nice in pie, breads, cookies and more. Cookies.. October is Cookie Month! But sometimes you just don't feel like baking cookies, but you have a cookie dough craving. Edible Pumpkin Cookie Dough
Ingredients
- 1 TBS butter (softened, unsalted )
- 1 TBS granulated white sugar
- 2 TBS brown sugar
- 1 TBS pumpkin puree (not pumpkin pie filling)
- 1/2 tsp vanilla extract
- 5-6 TBS all purpose flour **
- 1 dash salt
- 1/4 tsp ground cinnamon (to taste - add more just before the chocolate chips if you think the flavor isn’t enough)
- 1/8 tsp Pumpkin pie spice
- 3 TBS chocolate chips
Instructions
- In a small bowl mix together the butter, white sugar, and brown sugar.
- Add in the pumpkin puree and vanilla extract and stir it all together.
- Mix in 5 Tablespoons of the flour, the salt, cinnamon, and pumpkin pie spice. (If the dough is still too wet and soft, add in more flour 1 teaspoon at a time)
- Taste the cookie dough and see if you need more cinnamon or pumpkin pie spice.
- Mix in the chocolate chips and enjoy.
Option: Dipped in melted chocolate and put in the frig to set, makes for yummy Chocolate Pumpkin Cookie Dough Balls! Extra chocolate fix .. FIXED!
Notes:
**The FDA warns against eating raw flour. You can buy and use heat treated flour, or cook your own flour in the microwave or oven. Because this is such a small amount of flour it should only take about 30 seconds to 1 minute to get it hot in the microwave. Then let it cool for a bit, or it may melt your chocolate chips.

Ingredients
- 8-10 Oreo Cookies
- 1 cup chocolate chips
- 1/2 tsp coconut oil (optional)
- rainbow sprinkles (optional)
For the Eggless Cookie Dough:
- 2 TBS softened butter
- 2 TBS brown sugar
- 1 TBS white sugar
- 1/8 tsp vanilla extract
- 1 TBS milk
- 1/8 tsp salt
- 6 TBS flour
- 5 TBS mini chocolate chips
Instructions
For the Eggless Cookie Dough:
- In a small bowl, cream together your butter, brown sugar and white sugar until mixed.
- Mix in the vanilla and milk.
- Add in the salt and flour and stir till combined, and it reaches a cookie dough like consistency.
- Fold in mini chocolate chips.
For Assembling the Cookie Dough Stuffed Oreos:
- Open the Oreo cookies in half down the middle (I try to get the frosting all on one side, but its not necessary, just looks nice).
- Scoop a tablespoon of cookie dough and roll it into a ball. Place ontop of one side of the Oreo cookie. Top with second half of the the Oreo and flatten the cookie dough to spread it to the edges.
- Repeat with remaining Oreos and cookie dough.
- Melt chocolate chips in a medium sized bowl in the microwave for 30 seconds, then stir. Repeat for another 30 seconds and stir till smooth.
- Dip cookie sandwiches half way into the melted chocolate and place on a cookie sheet lined with waxed paper or a silicon liner.
- Top with sprinkles if desired.
- Place pan in the fridge to allow chocolate to set.
- Keep leftover cookies on a ziplock bag or airtight container in the fridge for 3-4 days.
