
There has been a lot of egg sandwich eatin' happenin' in my home for the past year since my Honey Ted had an esophagectomy (Feb 2023) to remove stage 1 cancer that was found in his esophagus. He had most of his esophagus and 1/3 of his stomach removed. Wtih radiation / chemo treatements before the surgery, and monthly immuno treatments with two more to go afterwards, it's a long road to recovery!
So far, Honey Ted's scans have come up clear of cancer! We are thankful for this, and hope it continues. Although the procedure and treatements to eliminate the cancer does not come without their own side effects that he deals with on a daily basis. A biggie happened after the surgery with his sense of taste. Things he loved before the surgery taste like dirt or spoiled salad such as coffee, mustard, chocolate, all nuts which includes peanut butter and more ... or they taste blah. There isn't much enjoyment in eating right now.
Eggs have been a big part of Honey Ted's post cancer surgery diet. He can whip up an egg sandwich in record time with all the practice he has had the past year. So when I ran across this particular egg hack, he decided he would give it a try. This egg hack, among the many that have gotten attention, uses water.

Start by heating a skillet over medium / high heat. Add water, nothing fancy like seltzer or ice water, just a splash of regular water instead of milk / cream to the eggs.
Beat the eggs until smooth with no streaks, then be sure to coat the heated skillet with butter. Once the butter is bubbling, but not brown, add in the eggs.
Wait until the edges of the egg mixutre begins to set, and use a rubber spatula to push the eggs from the outside of the pan towards the middle. Repeat pushing the egg around the pan until its like a ribbon of eggs in the center of the pan. Don't chop the eggs up during the process.
Once the eggs are about 90% cooked, take the pan off the heat, and cover the eggs in the pan for about 5 minutes. When you lift the lid, the scrambled eggs should be nice and fluffy.

Honey Ted added cheese to the lid / steaming process, which probably made a difference with the fluffiness. It did melt the cheese with the eggs well. It made a nice egg sandwich.

We both noticed the bottom piece of the english muffin bread had soaked in a bit of the moisture from the egg. It felt a bit wet. Plus the egg itself seemed to have a bit of a watery taste / feel to it. It wasn't flat, but not super fluffy. Or what we expected as 'fluffy scrambled eggs'.
I wish I would have gotten a photo of Honey Ted's eggs the day before. He made an egg sandwich using butter spray in the heated pan without water. He pushed the egg mixture all around to the center of the pan. Taking it off the heat with a lid on for 5 minutes. The egg seemed fluffier and less wet for a sandwich.
Does this hack work? We don't think we got the viral love outcome, but we had fun giving it a try and eating it. That's really what counts because life is too short not too! Enjoy!
