Coming off a milestone BDay weekend for honey Ted (6/12). We had a chill celebration that included this yummy experiment in the comforts of the cold AC. It became a late Friday night / Saturday morning creation. It was yummy worth it.

It started with the OREO Funfetti Brownie recipe on the side of the box. OREO Cheesecake Upside Down Brownies ... I thought, I've never made this before, why not give it a try for honey Ted's milestone Big 5 B-Day!

Funfetti recipe

I changed some minor things. Rather than water, I used Hershey's chocolate caramel coffee creamer. Melted butter rather than oil. Added some regular and dark chocolate chips to the brownie part of the mixture.

The Oreos I used were the dark chocolate filling ones, with a few chocolate covered mint chocolate Oreos. You can use whatever kind you like. It's fun to experiment!

The Cheesecake portion of it, I baked for about 5 minutes to set a bit. The patience part of this yummy brownie combo was making sure it was done baking and set, but not overbaked. Doing it in a springform pan, made it thicker than in a square / rectangle. The baking time took a good hour, but we did it in 3 minute additions after baking about 50 mintues! honey Ted helped with the 'check to see if it's set test'. It all depends on your oven. Do the toothpick type test, but have something longer to really get it in there to make sure it's set like brownies.Check a few places. Doesn't come out liquid, or super gooey. You may have to put some tin foil over the top towards the end of baking so the top doesn't over bake/ dry out and crack. I did. Here's a bit of the run down how our late Friday night / early Saturday morning went ...

I melted chocolate chips with a bit more of the coffee creamer and spooned it over the brownie creation, and let it set in the rig for 10-15 minutes. You could easily leave it like this ...

By early Saturday morning, it was time to decorate it with love, a staple look coming from my kitchen. It's thick and rich chocolately cheesecakey yummy. Try it out, anytime you're in the mood for this delicious combo. Shake it up, and make your own changes!
