This season I have found it hasn't been the easiest to find yummy Gingerbread options. When I do, like a mix, it's sold out. Or it doesn't really taste much like Gingerbread. Well, I ran across this recipe that is getting lots of love. It has over 1100 reviews, and most of them yummy good ones. I will need to try it soon. Gingerbread Fans! This looks to be a G-Loaf to try!
You could bake it in a loaf, square or bundt cake style pan. The word is if you enjoy a more spicy Gingerbread add twice of even three times the spices. I'd go for double to start. You can also switch out the water for buttermilk / milk. These changes could only make the recipe even better right?
½ cup unsalted butter, softened
½ cup white sugar
1 large egg
1 cup molasses (not blackstrap)
2 ½ cups all-purpose flour
1 ½ teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon ground cloves
½ teaspoon salt
1 cup hot water

Easy Tasty Gingerbread Cookie Cake
Betty Crocker Gingerbread Cookie Mix packet. You can follow it exactly like the packet for yummy cookies / or one big cookie in a circle baking dish. It's easy and yummy. I used a glass pie baking dish.
My substituions / additions:
I switched out the stick of butter for 1 cup of Greek Yogurt (regular/ low fat / non-fat) and mixed 1/2 tsp of ginger, 1/4 tsp of of clove in the yogurt plus 1 tsp. of vanilla. Also 2 tablespoons of egg white replace the 1 egg.
In place of the water I used an oatnog, but you can use buttermilk / milk or a vanilla cinnamon coffee creamer would be yummy too.
I mixed it, which it's very thick and sticky. I added 2/3 cup of white chocolate chips. Extra flour also comes in handy, for your washed hands, to pick it up to complete the mix. Or a mixer would Rock too!
Put the dough mixture in a greased (butter or pam) glass pie dish or whatever type of pan you would like. The cookie cake version comes out yummy baked at 350 in about 25-30 minutes. It can take a bit for the middle to be done. After about 20 minutes put some tin foil over it and bake 5 -10 minutes longer, until the middle is done. The foil keeps it from overbaking on the edges.
Let it cool. Melt some buttercream frosting in the microwave and drizzle it over top, or shake some powdered sugar on top, marshmallow topping , Cool Whip or go plain. It's yummy any 'ole way. There are lots of variations you can do. Mine is more like a cakey brownie. Or just stick with the packet, and enjoy! It's as easy and tasty of a Gingerbread as you would like it to be. Enjoy! Ho!
