Like many I LOVE CHOCOLATE. A yummy Chocolate Mousse can make me happy! When I saw 'One-Ingredient Chocolate Mousse', my first thought was, 'how can it look like the photo above?' 'Classic' Chocolate Mousse has eggs, cream, chocolate, sugar, salt ... way more than 'ONE' ingredient. Even an 'Easy' Chocolate Mousse has 3-4 ingredients. How can yummy Chocolate Mousse be accomplished with 'ONE' ingredient? 'CHOCOLATE!'
A French chef Hervé came up with it. The recipe is called 'Chantilly Chocolate' published in 2002! It was shared by Epicurious, who explains it's basically a science trick that creates this ONE-Ingredient Chocolate Mousse. You start with a high-quality chocolate that's around 70% cocoa. Chop and melt 8 oz of chocolate in a bowl that is sitting on water in a bain marie, which I just learned is a hot water bath. It's a more gentle way of cooking the chocolate giving it a smooth texture without burning it. Once it's melted, the bowl of chocolate is immediately placed in an ice bath to stop the cooking while it's being whipped up! That's it!
This would be the easy part of the recipe. Saying what to do, no problem. Actually doing it properly, that's the trick to the science. It's all in the process and timing.
How to make 1-Ingredient Chocolate Mousse This recipe says warm the chocolate in the microwave. I didn't see anything about a warm water bain marie. The size of the bowl seems to matter too. Where this how-to video shows pouring the hot water in the chocolate, then go for the cold ice bath whipping, which takes about 10 minutes. Get the power mixer ready!

If successful, a fluffy, rich Chocolate Mousse appears. No eggs, cream, extra sugar and other ingredients to worry about. A chocolate dessert that is friendly to those with egg and dairy issues too. It can also be catered to heart healthy and diabetic diets. All it takes is 'ONE INGREDIENT' - CHOCOLATE! I guess trial and error on which way works the best to whip the Chocolate into a Mousse form! I don't expect first time success, although that would be a happy yummy plus! Happy Whipping Y'all!
