
Everyone has a chili recipe, but for me, you just need a super simple recipe followed by a ton of fun toppings and textures. Here is my recipe:
Glenn's Loaded Chili with Chorizo Recipe
1 pound ground beef 80/20
2 TB Cumin
2 TB Chili powder
2 TS Garlic powder
1 Medium yellow onion (diced)
15 oz can diced tomatoes
8 ounce can of tomato sauce
4 tb tomato paste
2 TB sugar
1 1/2 cups beef broth
2TB olive oil
Toppings
1/2 lb smoked sausage (sliced thin)
1/2 lb chorizo (cooked)
1 15 oz can Tri-Color Beans (Navy, Kidney, Black)
1 15 oz can garbanzo beans
1 diced avocado
grilled poblanos (char on gas burner, diced up)
banana peppers
sour cream
shredded cheddar cheese
Frito scoops
Cook the onions in the olive oil for about 5 minutes. Then add the ground beef and break up until it's browned. Add the chili powder, cumin, sugar, tomato paste, garlic powder, and any salt and pepper. Stir it up.
Add the broth, diced tomatoes, and sauce.
Simmer for 25 minutes and then top it with all the toppings. Add crushed red pepper to increase the heat.
