Delicious Carrot Cake

I was on the quest for a Carrot Cake recipe and had to go back to my childhood to find one. My best friend's mom popped up and said "I am KNOWN for my carrot cake, let me send you the recipe!" And she was right, it was delicious. Even Grandma George, who is not a Carrot Cake eater, was delightfully surprised with how good the cake tasted. Enjoy!

Ingredients
2 cups flour
2 cups sugar
1/2 can Pineapple - crushed + drained
3 eggs
1 tsp cinnamon
1 tsp salt
2 tsp baking soda
1 cup oil
2 cups grated carrots
1 cup crushed nuts
1/2 bag coconut
2 tsp vanilla


Instructions:
Combine and mash together all with your hands—place in a greased bundt pan. Bake for 55 minutes at 375. Let cool before frosting.

Frosting
8 oz cream cheese, softened
1 stick butter, softened
1 lb powdered sugar
few tablespoons milk
