Liz's Kitchen: Grandma George's Texas Sheet Cake recipe

Grandma George and I have been baking like crazy and I absolutely love it. We're hitting all of her greatest hits and this week we did her "Lunch Lady Cake" aka Texas Sheet Cake. This actually is a pretty easy recipe, but of course she adds her little touches along the way. Hope you enjoy!

Ingredients
1 cup oil
1 cup water
4 tbsp unsweetened cocoa
2 cups flour
2 cups sugar
1/2 tsp salt
2 eggs
1/2 cup sour cream
1 tsp baking soda

Instructions
Bring oil, water and cocoa to a boil and mix together. Remove from heat and add to mixing bowl where the sugar, flour and salt are already in the bowl. Mix well. In a separate bowl beat eggs and add sour cream a baking soda and mix well. Add to chocolate mixture and beat well. Pour into a greased jelly pan and cook at 375 for 20-25 minutes or until a toothpick removes clean. While it bakes, make the icing.

Icing
This is where Grandma switches things up, the recipe call for heat but she prefers to avoid that. Take one stick of softened margarine or butter and mix well with 4 tbsp unsweetened cocoa and 4-6 tbsp milk. Mix well! Add the confectioners sugar slowly and mix well (I used a wooden spoon), once all mixed in add 1 tsp vanilla and mix that it. Spread on sheet cake after it's cooled but still a little warm.
