Liz's Kitchen: Grandma George's Zucchini Bread recipe

I think my favorite thing about Liz's Kitchen is how a good recipe can make you feel like you're sitting at your grandma's kitchen table...but I literally get to do that when I finding recipes. It's turned into "Can you make such and such that she would make us all the time?" We're literally baking memories and its awesome. That's how this recipe came up, and we had to go digging for it but boy was it worth it!

Ingredients
4 cups zucchini, diced
1 cup oil
3 eggs, lightly beaten
2 tsp vanilla
2 cups sugar, one cup brown and one cup white
3 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
pinch of nutmeg
salt to taste

Instructions
Place zucchini in a food processor and puree until coarse. It should come to about 3 cups. Add zucchini to a bowl with the remaining ingredients and stir. Grease your pan and line it with wax paper, then pour in the mixture. Bake at 325 for an hour. This recipe is enough for two loaves.
