Ingredients:
• Rice and quinoa mix 90 second pack
• 4 medium to large peppers (red, green, yellow)
• small Onion
• Italian seasoned sausage (We used Beyond Meat Hot Italian Brat)
• tablespoon of Italian Seasoning
• Salt
• Pepper
• Olive Oil
• Pasta sauce (Chunky Vegetable preferably)
• 2 teaspoons Garlic paste (Better Than Bouillon or similar)
1. Wash produce
• Cut off pepper tops and clean out & throw away seeds
• Pat dry with towel
• After removing stem, mince peppers’ tops
• Mince half cup of onion
• Remove casing from sausage and then chop (used 4)
2. Cook
• Heat pan medium to high and preheat the oven to 375
• Once hot, add a tablespoon of olive oil
• Add minced peppers to pan, cook down 2-3 minutes
• Add onion, cook for 2 mins
• Add sausage and brown for 5 minute, tossing as needed.
• Add a tablespoon of Italian seasoning and salt and pepper
• Add garlic paste, blend into sausage mixture well for 2 more min,
• Add the cooked rice and immediately remove pan from heat
3. Bake
• Line a small oven pan with foil
• Stuff the peppers with the mixture and place in oven pan
• Top peppers with pasta sauce and bake for 30 minutes or longer,
• Until desire pepper tenderness is reached.
