Make The Cashew Cheese!
Add cashews to food processor until buttery consistency then add nutritional yeast, cumin, garlic powder, chili powder, 6 tablespoons of salsa!
1 1/2 cups of cashews
1/4 cup of nutritional yeast
1/4 teaspoon garlic powder
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon salt
6 tablespoons mild salsa
The Quesadilla Stuffing! Most is Optional! I used non-dairy sour cream!
Non Dairy Cheese
Spinach
Tomatoes
Colored peppers (grilled)
Cilantro
Other choices include:
1 15-oz can black beans, drained and rinsed (1 1/2 cups)
1 small zucchini, chopped small
1 small yellow summer squash, chopped small
2 small tomatoes, chopped small
3 mushrooms, chopped small or sliced
Meat!
Use whatever plant based ground beef product you want.
I seasoned mine with:
Lawry's Seasoning salt
Pepper
Cumin
Garlic
Chili powder
You can also use a powdered or sauce taco seasoning.
Shell!
8 tortillas (8-10 inch size), whole grain, gluten free or white if preferred*
Directions:
After browning the plant based meat, making cheese and grilling veggies, heat the tortilla in a frying pan, on a grill pan or in a panini maker or oven.
Add your desired stuffing. Add tortilla to the top, carefully flip and repeat.
Your Vegan Quesadilla is ready to cut, like a pizza and then eat!
