
New Year’s Eve means celebrations, which often leads to drinking, which leads to a hangover.
Speaking with WWL's Ian Hoch, Chef Kevin Belton shared his remedy for that...his Hangover Casserole recipe.
“The first thing you have to do is brown your sausage, and I use like breakfast sausage… while that is browning off, dice up your potatoes real small…cubed…put about six eggs, seven eggs in a bowl…beat those, season them if you want…take your sausage out the pan, if you are doing about a pound of sausage then pour about four cups of milk, and then make a slurry of ¾ cup of water with about a half cup of flour…stir that in a bowl or glass until it smooths itself out, then pour that into your milk…by the time that heats up it will make a thick gravy… now you are ready to assemble… so take a 9x13 pan…butter it.. press your potatoes down in the bottom of the pan… pour your beaten eggs all over them… I add onions… then add cheese, I like shredded cheddar jack…then pour that sausage gravy on… and then put some more cheese on top, and then throw that baby in the oven for about 45 minutes to an hour at 350.”
