If you’ve got a craving for crawfish before spring rolls around, there’s hope on the horizon. According to Louisiana Agriculture Commissioner Mike Strain, after a long stretch of drought conditions, recent rains mean good news for crawfish lovers across the state as Christmas draws near. “This recent rainfall has been great, and we’re hoping for a good crawfish season,” Strain says. “We had a very good rice crop, so moving forward we’re looking at crawfish next,” he went on to emphasize.
Strain points that the crawfish you will be able to find in December may be pricey, but it’s a uniquely Louisiana way to celebrate the Christmas season and a great time to show off one of the state’s favorite seafood staples to loved ones vising for the holidays. He also points out that there are plenty of other locally cultivated options available for your Christmas feast. “While we start anticipating crawfish now, if you can’t find crawfish there are some beautiful shrimp out there. You need to grab some of our Louisiana shrimp,” added Strain.
