"Fried shrimp sushi taco" is one example that NOLA.com's Ian McNulty gave WWL's Tommy Tucker: east meets west meets south of the border.
"So this is fried shrimp over sushi rice in this nori strip that had been fried, so it's crunchy and crispy, but still that kind of briny, seaweedy taste," McNulty explained.
He said that offering comes from Nori Guys, a pop-up that is new to the fest this year.
"There's Indian street food, at another booth over by the Jax Brewery lot," said McNulty. "There's Haitian food out there now, there's a Haitian restaurant in the Treme called Fritai, and they're making their festival debut."
McNulty said if you like spicy, give them a try. He says some if it is eye-wateringly hot.
"If you're a fan of spicy hot dishes, make a bee-line to that Fritai booth," he said. "My mouth was on fire, but in a good way."
And you can certainly find New Orleans favorites, from Vaucresson's sausage po' boys to muffalettas to cochon de lait.
