
CHICAGO (WBBM NEWSRADIO) — Mayor Lori Lightfoot has applauded the expansion of a food company that using a new type of protein that had its beginnings in a geothermal pool at Yellowstone National Park.
Co-founder Thomas Jonas said his company, now known as Nature's Fynd, was working with NASA studying alternate life forms when they discovered a fungus that developed into a protein called FY. They use it as a meat and dairy substitute.
Lightfoot said it tastes great and she's happy to say the company's expanding on the South Side.
"As we all know, Chicago's former Union Stockyards, the site of Nature's Fynd's first facility, was the epicenter of the 20th century meatpacking industry. Through this innovation, and a bit of irony, I must say, they are reinventing the future of food and reclaiming the old stockyards as a future world leader in new proteins," Lightfoot said.
Officials said the expanding production could mean about 200 new jobs.
