Avocado Cauliflower Puree with Seared Cod

Looking for something incredibly healthy and easy to make? This recipe is it! Simple ingredients and tastes yummy!

Ingredients:
2 cod fillets
2 1/2 cups boiled cauliflower florets
1/2 of a medium sized avocado
1 tsp olive oil
1 Tbsp Everything but the Bagel seasoning
1/2 tsp hot sauce (optional)

Directions:
Spray a skillet with avocado cooking spray (or olive oil cooking spray) and heat skillet on medium.

Add the cod fillets to the skillet. Sear one side and then flip the cod over and cook until the fish reaches an internal temperature of 145 degrees.

While the fish is cooking, add the boiled cauliflower florets to a blender and purée until finely chopped.

Add the avocado to the blender and purée until well mixed, slowly drizzle in the teaspoon of olive oil.

Add the Everything but the Bagel seasoning and hot sauce, if you choose. Purée until creamy.

Avocado Cauliflower Puree with Seared Cod

Divide the purée among two plates and add the cod fillets to the top of the avocado cauliflower purée.

Serve.
