Blueberry and lemon is such a great flavor combination, especially for summer. This dessert is kind of like cake but denser and more gooey. The lemon zest gives it a nice, bright flavor! It’s very easy to make and so yummy!
1 cup sugar (plus a tablespoon or two to sprinkle on top)
1 cup all-purpose flour
1 tsp cinnamon
1/4 tsp salt
1 stick (1/2 cup) butter, melted
2 large eggs
2 Tbsps juice from a lemon
2 tsps lemon zest
1 tsp vanilla extract
1 tsp almond extract
2 cups fresh blueberries (plus a handful to sprinkle on top)
Preheat oven to 350 degrees. Spray a 9-inch round glass pie dish with cooking spray.
Mix the flour, 1 cup of sugar, cinnamon, and salt, in a medium bowl and set aside.
In a separate medium size bowl, melt the butter and let sit for 2 minutes before adding the eggs so you don’t scramble them.
Add the eggs, extracts, and lemon juice to the bowl with the butter. Whisk together.
Pour the wet mixture into the bowl with the dry ingredients and stir to combine; don’t overmix.
Fold in 2 cups of blueberries and the lemon zest.
Pour mixture into the greased pie dish, spreading the mixture evenly around the dish.
Sprinkle a large handful of blueberries over the top of the mixture and then evenly sprinkle a tablespoon or two of sugar on top.
Bake for approximately 45-55 minutes. Baking time varies depending on your oven.
Allow the dessert to cool before serving.
