Peach Caprese Salad with Fresh Cherries

Traditional caprese salad typically consists of fresh slices of tomatoes and mozzarella with basil and balsamic vinegar or glaze. This is a fun, summer time twist on the traditional version and incorporates fresh peaches and cherries to replace the tomatoes. Give it a try. You’ll love it!

Ingredients:
5-6 peaches, sliced
1 cup fresh cherries, pitted and sliced
8 oz fresh mozzarella, sliced
1 shallot, finely chopped
2 Tbsp Cherry Almond balsamic vinegar (you can use regular balsamic vinegar, as well)
Sea salt
Course black pepper
Basil leaves (15 leaves, chopped, leave 2 whole for garnish)
Balsamic glaze, for garnish

Peach Caprese Salad with Fresh Cherries

Directions:
Combine the cherries, balsamic vinegar, olive oil, shallot and some salt and pepper in a bowl. Let sit in the fridge for 20-30 minutes.

Cut the peaches in half and remove the pits. Cut lengthwise into slices. Slice the mozzarella 1/2-inch thick, if not already sliced.

Layer the peaches and mozzarella on a serving plate, alternating one after the other. Spoon the cherry/balsamic mixture on top of the peaches and mozzarella, then sprinkle with course sea salt and drizzle with olive oil and balsamic glaze. Sprinkle the basil over the top.
