The New York Times recently released its annual list of the 50 best restaurants in the nation, and though no spots in North Texas made the cut four restaurants in the Lone Star State were among those recognized.

Those restaurants include:

-ChopnBlok in Houston, which serves dishes inspired by West Africa
-Isidore in San Antonio, a restaurant for New American steak and seafood
-Lao’d Bar in Austin, which specializes in Lao American cuisine
-P Thai’s Khao Man Gai & Noodles, also in Austin, and serves Thai-Chinese dishes.

Per the Dallas Morning News, the Times says that people who carried out this work followed three principles: they paid for their meals, made unannounced visits and used regular reservation booking tools or walked in.
