BBQ isn’t just a type of cuisine in Texas; it’s a way of life. That’s why it’s a shame that the current Guinness World Record holder for the longest BBQ Marathon Team is held by Mondo Convenienza of Italy. Luckily, that’s about to change this week as Fort Worth’s own Panther City BBQ is attempting to break the record, barbequing for over 40 hours straight.

On Wednesday, Panther City BBQ will begin their world record quest, smoking dishes such as fajitas, tablitas, brisket, hamburgers, bell peppers and onions continuously for 43 hours. The current record is 40 hours and 53 seconds, according to Dallas Observer. All the food cooked during the record attempt will be donated to front-line workers, the Fort Worth police and fire departments, medical workers and local charities.

Of course, anyone in the area may get a taste of the world record as well, as the restaurant will be giving out samples during the event. They will also be live-streaming the event for all the BBQ enthusiasts around Texas that can’t make it. Soon, the BBQ world record will be held by a Texan, as it should be.
