Sarah's Meatloaf

There's meatloaf and then there's MEATLOAF. Growing up we always got the kits from the store with the mix of meat and then used a box mix, which was fine! I loved meatloaf night growing up. However, when my friend Sarah made her meatloaf for me my palate refined immediately and I've never looked back. I don't often use the word decadent but I will for this recipe. The sweetness and tanginess combined make this the perfect meal with you hoping for an end piece. Serve this with mashed potatoes and you will be the dinnertime hero!

Meatloaf ingredients

Ingredients
3 lbs beef
2 cups Italian breadcrumbs
2 eggs
1 red bell pepper
1 onion
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
1 tsp salt
1 1/2 cup brown sugar
3/4 cup bbq sauce
1/4 cup milk

Instructions
Dice your onion and red pepper into small dices.

Heat your pan over medium heat and add the olive oil. Sauté your peppers and onions until soft and then let cool.

While your onion and peppers cool you can prepare your loaf pan. Take your brown sugar and line the bottom of the pan, patting it down. Next, take your BBQ sauce and drizzle it over the brown sugar. This is going to make a sort of gravy that is the KEY to this recipe!

Now take your beef and add the bread crumbs, eggs, milk, onion powder, garlic powder, black pepper, salt, and the cooled peppers and onions. And mix well.

Take your mix and add it to the loaf pan, filling it out. Cook in a 375-degree oven for about an hour and fifteen minutes (or to temp at 160).

Remove from the oven and let cool. Slice into pieces and drizzle the gravy over the slice of meatloaf. Serve with your favorite side (mashed potatoes).
