Local bakers rolling in royal dough

A lot of New Year's resolutions are getting sorely tested in New Orleans. 

For the next two months, folks in the metro area will be getting their daily dose of king cakes.

The purple, green and gold pastries start showing up in offices throughout the area today. 

And, that means local bakeries are going to have some busy ovens.

How many cakes will bakers bake by Mardi Gras?

"Oh wow! You know, that depends on the season," says David Haydel, co-owner of Haydel's Bakery. "But, we're geared up to make about 70-thousand this year."

"With Mardi Gras going into the first week of March this year, that's going to give everybody plenty of time to sell plenty of king cakes," says Haydel. "And, depending on how the Saints do in the playoffs...especially if they make it to the Super Bowl...we could be making a lot of Black & Gold king cakes, as well."

He says 70-thousand cakes means lots of folks rolling dough. "During the normal time of year, we have about 30 full-time employees. And, during Mardi Gras that ramps up to almost 80."

And, if you think that's something, Michelle Knight, Bakery Director for Rouse's says the supermarket's 59 bakeries should easily turn out a half million king cakes this year.

"We're going to try to beat the 500,000 king cakes that we have done in the past," says Knight. "Last year, which was a shorter season, it was over 500,000. That's with shipping." 

Can Rouse's top the half-million mark?

"I think it's going to be easy," she says. "With the Saints playing like they are and Mardi Gras being a longer season, it's definitely achievable."

In fact, it should be a piece of cake.
