A staple of any barbecue restaurant is its brisket. Heck, a lot of people will judge a barbecue restaurant by the quality of its brisket.
But Texas is facing a problem: brisket is becoming just too expensive, so a lot of barbecue joints in the Lone Star State are facing a tough decision of whether or not to even offer brisket on the menu!
According to the Houston Chronicle, most barbecue joints across Texas are having to sell brisket at three times the face value just to break even, so most restaurants are selling their most popular product these days just to break even, or even at a loss.
And the price of beef hasn't come down in the last few years, which unfortunately is due to Texas being a victim of its own success. As barbecue has expanded nationally and internationally, the demand for brisket has skyrocketed, keeping the beef prices high.
To cover their losses, many pitmasters across Texas are considering just not selling brisket at all and replacing it on the menu with something else.
What could possibly replace brisket?! We have no idea, but if beef prices continue to trend upward that might be a reality we all have to stomach.
