Smoked Beef Short Ribs with a Sweet and Sour Citrus Glaze

Learn how to properly cook and perfect Smoked Beef Short Ribs with a Sweet and Sour Citrus Glaze during Smoke ‘n Thyme with Dania.

Ingredients:
7-8 lbs beef short ribs (bone-in)
Mustard
Your favorite rub (Mine is Roger’s Rub)
Apple cider vinegar


Glaze Ingredients:
1 cup brown sugar
3/4 cup citrus champagne vinegar (can sub other types of vinegar)
3/4 cup ketchup (can sub barbecue sauce)
1 Tbsp. mustard
1/2 Tbsp. Yuzu citrus hot sauce
Juice of one orange
1 Tbsp. orange zest

Instructions:
Beef short ribs can be prepared by a number of methods. I chose to cook these on my smoker, as it adds a wonderful layer of flavor. If you don’t have a smoker, you can always cook them in an oven, the crock pot, instant pot, etc.

Start your smoker and bring to a temperature of 275 degrees. Trim fat cap/excess fat from the ribs. Use mustard as a binder and slather the ribs with it on all sides. Add a generous amount of your favorite rub to the ribs and massage into the meat on all sides.

Place ribs on the smoker and cook until they reach an internal temperature of 106-110 degrees. After two hours on the smoker, spray the ribs once an hour with apple cider vinegar. When the ribs are done, wrap them in peach butcher paper, or foil if you don’t have peach paper, and place them in a cooler (Yeti, Arctic or whatever you have on hand) to let rest for one hour.

While the ribs are resting in the cooler, combine the ingredients for the sweet and sour citrus glaze in a medium to large sauce pan. Bring to a boil and then lower the temperature to simmer. The sauce will thicken slightly when cooling.

After an hour, remove the short ribs from the cooler. You can serve these whole, but I prefer to shred the meat to make it easier to eat. Drizzle the sweet and sour citrus glaze over the rib meat, garnish with orange zest and scallions, then serve.

**Please note: If you are making the ribs in the oven or a crockpot, you can cook the ribs in the glaze. I would recommend doubling the sauce recipe if you cook the ribs in the sauce.
